CUY AT RICAURTE PARISH

This parish is famous for the peculiar preparation of the traditional cuy (guinea pig) with roasted potatoes on the side; one of the most delicious dishes of the Ecuadorian highlands. Ricaurte is located to the northeast of Cuenca and the best time to visit this part of town is on the weekend.
